The culmination of 3+ years of excavation, brewing and fermentation in our on-site cave is now here! This is the release of our first-ever three-year blend of spontaneously fermented, cave-aged beer. We call it CAVESHIP '23.

About the event
Caveship '23 is inspired by an authentic Belgian Gueuze--a blend of 1-, 2- and 3-year old lambics. Caveship '23 is a blend of beers that has been 100% spontaneously fermented outside overnight in a coolship vessel to capture the wild yeast from the night air then aged inside our natural cave in neutral oak barrels.
Countless close friends and family members have helped to make our cave program possible. Special thanks to our friends at Jester King for lending us their mobile coolship and aged hops.
Our goal five years ago, when we first discovered the cave, was to produce a traditional 3-year blend of 100% spontaneously fermented cave ale to showcase the native TX Hill Country microflora and this special environment. We've come to learn how ambitious that goal was! Now here we are. It's with a lot of heart, dirt and sweat that we bring these beer to fruition. It's an insanely laborious task, but every time we descend down the ladder into the cave, we remind ourselves how uniquely cool the formation is and why we seek to experiment within it. It simply reminds us of being a kid again. Thanks for joining us on this journey! We hope to one day open the cave to the public, but until we can overcome many safety concerns, we'll have to settle with sharing a beer.
We plan to release one 3-year blend each year, followed by various fruit refermentations released in tandem.
